Cottage Cheese Salad
I got my grocery delivery today, and I’ve been trying to eat well, so I decided to come up with my own version of a cottage cheese salad, with the guidance of several resources found by Google Search. Since my groceries are delivered by Chuck and Bird’s, almost everything (unless it’s pantry items or other things I had previously) I used was local and organic.
Here’s what I put together:
- 1/2 small container of small curd cottage cheese, which was about 3/4 cup (mine is from the grass-fed cows at Traders Point Creamery in Zionsville, IN)
- up to a dozen capers for natural salt
- a few slices of spicy gherkins for sweetness
- a hard boiled egg, chopped up
- a big handful of mixed greens
- about 1 tablespoon of Annie’s Naturals Roasted Red Pepper salad dressing (my new favorite)
- a good sprinkle of red pepper flakes
I mixed everything together and it was the perfect amount of protein and flavor, with extra surprises of crunchy lettuce, capers, and pickle in between. I was so pleased!
By the way, I eat a lot, so this was a normal portion for me, but maybe double for you.
